Thursday, while mom was here, we decided to finally make the raspberry pie that my wonderful mother-in-law sent me the recipe for. (Gordon and his family have raved about this pie, and since he'll be home for a visit in less than a week, I figured I should practice.) We made it, and let it set. We were gonna dive into it when Daddy got here, but we forgot about it, and Daddy was perfectly content with the four dozen chocolate chip and walnut cookies I made for him.
Sunday, after they left, I decided to break into it. I cut a little piece, and nearly floated away. It was delicious. There was barely any baking involved (except the crust). It was easy.
Here's the recipe, love my mother-in-law:
4 cups fresh raspberries (you can use frozen, but she swears by fresh fruit, and I'm inclined to agree)
1 cup sugar
2 tablespoons cornstarch
1 3/4 cups water
1 3-oz package of raspberry jello
In a saucepan, cook the sugar, cornstarch, and water until nearly clear. Add Jello, cook until it becomes thick. Mix in (or pour over) raspberries then add to pie crust. (If you pour the mixture over the raspberries, you can put them directly into the crust and pour mixture over it, in crust.) Place in the fridge until it sets/becomes solid. (Usually overnight.)
Delicious.
